Vitamin C exerts antihistamine activity which helps directly in the treatment of allergies. Vitamin C increases the function of many immune cells including T cells and phagocytes (which destroy invader cells). As an antioxidant, ascorbic acid can protect cells from reactive oxygen species known to cause tissue damage and disease.
Quercetin, found in rose hips, provides the highest degree of anti-allergy activity of all of the bioflavonoids. Quercetin stabilizes the mast cells, which govern the severity of allergic reactions. Quercetin causes mast cells to become less reactive to allergens, resulting in the reduction of the release of histamine in the presence of an allergen and consequent reduction of allergy symptoms. It exerts anti-inflammatory effects that retard the swelling of the lungs, eyes, and nasal passages, and it exerts anti-histamine effects that help to prevent runny nose and watering eyes
